Do any of the buffets, especially the Seafood ones, (Rio, etc) serve Escargot in their line up? Or maybe one of the non seafood ones might have these?

I have had it a couple of times at the Palms dinner buffet, but neither time was a specific theme night, so it's going to be hit-or-miss catching it there. Also, the first time it was very tasty, and the second time... not so much.

The Palms has had them on Sundays at the buffet. Probably only at dinner. Most of the time, really good.

I don't know of any Vegas buffets that have Escargots in Las Vegas. But if you venture 90 miles south to Laughlin, NV (on the Colorado River), you will find your "TREASURE".
In the gourmet restaurant Granny's at the Pioneer in Laughlin, they have a Sunday Champagne to DIE for. Yes, that includes a large domed tureen of ESCARGOTS packed back in their shell, with the accompanying garlic and butter. Now, they have lightened up on the butter these days (got to keep the cliental alive), but they are still great!! They are served EVERY Sunday ... on of the "staples".
Most of the time, they ALSO have lobster tails, frog legs, filet mignon , etc.
Then the dessert stations cooks up crepes suzette, bananas foster, rasberry crepes, all FLAMED with Grand Marnier, Creme de Banana, etc. And at that same station, if you don't like sugar, there are Lobster Crepes FLAMED with RUM.
All this for about $20 (no kidding). We found this place over 20 years ago in 1988. In those days, you had to call in reservations AT LEAST 3 weeks in advance. But they have expanded their restaurant space since then, but you may still have to call ahead about a week in advance. And they insist on proper dress code (slacks, shoes and shirt for mwn, etc).
Also, Laughlin has the best VP overall in Southern Nevada ... a lot of full pay games (check out vpFree).
