If you are willing to go off-Strip, I'd suggest Sen of Japan at 8480 W
Desert Inn Rd. The owner, Hiro Nakano, was former head chef at Nobu.
Along with the usual sushi, Sen offers many hot dishes, omakase, and
special rolls. The ambiance is cool but casual, and service is warm and
friendly. The last time I was there, Andre Agassi and Steffi Graf were
there holding hands and looking more like they were courting than an
"old" married couple. Sen is not inexpensive, but more affordable than
Okada or Nobu.
