I've have cashback accumulated on my slotcard at Venetian, Sam's
Town, and LV Hilton. I never cashed them.
When do they expire? And should I have cashed them at the end of the
trip even though i plan to return in a couple of months?

I'm referencing a handy book called "Las Vegas Slot Clubs" by Charles
Lund. Unfortunately it's the 2001/02 edition.
As at that time, the status was:
Venetian - slot accounts expire after 12 months of inactivity.
Sam's - inactive accounts are terminated after 18 months.
Hilton - expires after 18 months of inactivity.
Being from out-of-town, I believe it's best to take the cashback
before leaving. A bird in the hand, etc.
