In games called "Joker Poker" or "Joker's Wild": one
Double Joker: two (These games are most common in Atlantic City - rarely seen elsewhere)
There are also versions with four or five jokers rarely seen in Las Vegas.
Notes: The above applies to games found in casinos and not to the crooked games sometimes found in bars.
I have also seen some computer software packages use a Joker Poker paytable but have two jokers instead of one. That will never happen in a casino.
