I think most of the people that frequent this forum are used to sitting
on the other side of the bar. I have noticed that a lot of the small
operations tend to align themselves through Gamblers Bonus. They can
set you up, take care of a slot card system, and of course take
revenue. It does free you up to concentrate on the food and beverage
end of the business.
http://www.gamblersbonus.com/home/I was just reading an article yesterday about a some guys in the Reno
area setting up something like you are talking about.

So you are going to brew beer...or at least have something tasty on-tap? Big
Dogs seems to be a model. I never made it to any Big Dogs in Vegas, nor did
I experience the "Holy Cow" across from the Strat.
Here is a site that rates the 28 Big Dog beers that have been brewed
including the original Holy Cow Pale. This site has a hot link to the Big Dogs
webpage. They discuss how the new smoking law has affected their operation:

But how about some Holy Cow VP stories? I understand they are still doing
coupons in the usual books (POV, ACG). Who always did a VP/coupon run at the
Holy Cow? They didn't sweat a coupon, I hear. Holy Cow have something good to
eat?
