My wife is about to go over the 100,000. It will happen naturally when we go to the gift wrapup Dec 1, but I thought I saw some posts that you need to make it before Dec. 1 in order to get some benefit(s) such as as the annual trip. Can someone clarify?

You get MORE great gift wrap up points if you make it before then.
That is the big incentive!
The sooner the better, so they can add the bonus gift wrap points before you shop at Caesars.

I'm not aware of any difference in benefits (annual trip, gift, dinner, etc.) whether you get 7* by December 1 or December 31.

If getting the annual trip and dinner for the 2010 year (as compared to the 2011 year which you are actually earning Seven Stars status) is important to you, I would confirm this in detail with your dominant property and have it in writing so there is no confusion when you make plans for your 2011 trip.
Some Harrahs properties will not give the trip and dinner for the 2010 year if not earned by December 1. You do though get the trip and dinner for the 2011 year.
