I've never liked people standing to observe me play. In a way, its my "dime"
and if they want the thrill of the hands, ante up and play their own
machine(s). I also play fast and the observers usually want more time per hand to
appreciate what was held, played and the coin result.
I, too, am concerned with anyone too close for security reasons. Passerby
types who only linger for a moment or two are of no concern but those that stay
too long and even want to engage you in conversation are intrusive.
If I "feel" that I'm being watched, I simply take my hands off the machine
and wait; no action to see or comment on. I rarely look back at the people who
may then feel challenged to "wait me out" but simply refuse to perform for the
gallery. It usually works and they move on..

PS When I have a Royal on the screen ready to be paid, it seems to generate
a few congratulatory comments of passer-bys. I try to be gracious but don't
extend any conversation.
