Your best bet for native Mac software is Dan Paymar's OptimumVP. It has neither the audio/visual polish nor the "weird game" support (Multistrike, Super Times Pay, etc) of newer Windows-based products, but it's a perfectly competent trainer for normal single-line games. It includes a decent number of pre-programmed paytables (including bonus, deuces wild, and joker variants), as well as several other interesting features like risk of ruin calculator, slot club analyzer, and, strangely, a Keno analyzer.
It's quite a shame that none of the other major VP software providers are choosing to compete in the Mac market...
