Would appreciate any input re GVR from anyone who has visited there
lately. Have checked the database for playable VP, but am curious
about rooms, restaurants, live poker, etc.
GREEN VALLEY RANCH
I haven't played there lately, but I have been to several of the restaurants, which have all been good. The coffee shop serves bread from the LaBrea Bakery (very upscale, very delicious); the chinese restaurant is one of my local favorites; Il Fornaio is authentic Italian and has special menus featuring cuisine from different regions of Italy; Fado has a great selection of beers on-tap, and the Original Pancake House has an apple panckae that's "to die for." I have not been to the steak house, but I've heard really good things about it, including the chichi martini bar.
Adjacent to the resort is a "lifestyle area," called "The District." The District features many additional good restaurants (and boutique, as well as upscale chain shops). Lucielle's Barbeque is loved by many (not me, but I'm in the minority on this one); King's Fish House is FABULOUS; the Elephant Bar is really good and reasonably priced; Kennedy's is rumoured to have a killer Ceasar Salad (I haven't been there); PF Changs is delicious and across the street in The District II, there's a branch of The Cheesecake Factory and a Whole Foods Market (which offers a wide variety of prepared foods and has a seating area for eating in). I'm not sure of its hours, but there's a trolley that runs between The District I and II, and I've heard that it's going to also start making stops at the hotel (but I don't know details).
The resort is conveniently located by the I-215 freeway, less than 15 minutes to the airport and 20-25 minutes to the strip.
I know I'm missing some things, but this should get you started.

What Lainie said plus, The new live poker room will open in October. I
don't know the exact date. There is live poker available near the
sportsbook now if you would be coming before the new room opens. Hotel
rooms are very nice!
