I can only speculate, but since they display the cards, and the rules say that cards must be as represented, I don't believe that the cards are shuffled after the deal. Also , after you make your selection all the cards are displayed which also makes the shuffling less likely. Then again it really wouldn't make any difference to your end result if they are shuffled or not.

When you press "double" after a winning hand and the dealers card is shown face up with the other cards shown face down, are the 4 cards you have to choose from fixed, or do they continue to shuffle until you make a selection?
