What can I expect to pay for a cab ride from McCarren to the Venetian? What route should I request to sound knowledgable and not to be literally "taken for a ride" by an some shady cabbie?

If you tell the cabbie not to take the tunnel you should be good. It is in
some circumstances quicker, but more expensive due to distance traveled.
While it's hard not to, rubbernecking during the ride can give the cabbie
the impression that you may be naive as to common fares and could subject
you to being victimized.
I've never gone to the Venetian from the airport, but I would think $25
would do you.
It bears mentioning, perhaps to ease your conscience in case you were
unaware, that all taxi companies' fares are regulated by a governing
authority, and I believe that the number is posted in each cab - if you feel
like you're getting longhauled, express your concern to the cabbie, pull out
your cell phone, and threaten to call the taxi authority (or actually do
so). Or tell the cabbie that you're not going to pay the full fare, but
rather what you feel is fair, as you feel that you've been longhauled;
friends' experience shows this to be a successful means of not overpaying.
I personally have gotten longhauled once or twice in many trips to Vegas,
but far more often have had cabbies go above and beyond to accommodate their
passengers, from the cabbie who stopped the meter during a gridlock and then
offered us a discount on the total fare, to the one who showed us the side
entrance to the MGM Grand that takes one straight to the Monorail depot.
Good luck on your trip, and during your stay I highly recommend Wolfgang
Puck's Postrio - be sure to sit on the perimeter of the courtyard so you can
catch the show while you eat - it's quite an experience!

Actually the law states that it is the responsibility of the CABBIE to get permission from the customer.
Quoted directly from the NV Taxicab Authority website:
"Use of the I-215 tunnel from McCarran airport is NEVER the shortest route to ANY Las Vegas Strip hotel."
IMO the tunnel is okay (excluding traffic/accidents) if you're traveling to Mandalay Bay, Southpoint and M.
If a cabbie tunnels you without your permission then he/she is in violation. Tell the cabbie he/she can eat the fare for trying to rip you off or you will be happy to call the Nevada Taxicab Authority (702-668-4000).

Warning: Over the past ~10 years, my friends and I have gotten 3-4 free
trips from McCarran this way. However that may be changing.
In June, I was already in LV when some friends came to join me, and they
got tunneled from the airport. I met them at the entrance and we did
the usual song and dance and the cabbie said go ahead, call the
authority. We figured he would cave rather than wait for an agent to
show up and face possible fine or whatever, but he seemed happy to sit
there for the ~45 minutes or so that it took for the guy to show up.
They filled out a complaint form, but in the end, they still had to pay
the fare shown on the meter, and then contact the cab company for a
refund. You can guess how well that went. Phone tree, voicemail, phone
call never returned, etc.
So things may have changed such that the tunnel freeroll isn't the
slam-dunk it used to be, or we got a particularly tenacious cabbie.
