If we are going to figure this payoff out we need some emperical
data. What sample size do we need to achieve what confidence?

Here are my lifetime results:

Generally speaking, one can use the small sample size distribution
with less than 30 observations. However, in this case, this is not
realistic due to the outlier -- that rare 2,500 coin bonus will skew
your result.

My recommendation is to collect enough data points for the other
payoffs and use the observed distribution (sans the 2,500 coin hit)
as the floor value in calculating your return.
