It wouldn't be much of a stretch to include playing stats &
produce macro reports such as:
-- % of time on potential 100%+ machines or games
-- % of time playing during promotions
-- Actual win vs theoretical
-- Coupon usage (looking for instances of abuse, overuse,
duplication or counterfeiting)
I don't know beans about what casinos "actually" do but I'm nodding
my head yes with what CM and TC have written so far.
I've noticed that every now and then a VP machine I will be playing
will pause or lag before displaying the next hand. I would assume
there was either a network or server cpu bottleneck?
The way I figure it, when I play winpoker on my pc, it has no problem
tracking the quality of my play so why shouldn't the casino's vp
machines? I'm not saying a person at a casino will review the
activities of most players in individual detail but that every
players club member will have their activity summarized by some
software and they will be categorized. Things like what Ted lists
and things like:
- This guy is bonehead. He had 4 dueces and threw them away.
- This guy is pretty good but will try for a full house that
pays only 3 instead of 4.
- This guy is a machine - almost perfect play
Ted mentions "actual win vs theoretical" above - I'd modify it to
"Actual play vs theoretical"
The fact that a large corporation like MGM Grand allowed themselves
to get beat by a known pro like Bob Dancer as recently as 2001
means that the casinos probably:
-- don't have the software
-- have the software & don't know how to use it (more likely)
-- have the software but substitute ego needs above what the
reports tells them they ought to do (also likely)
I don't know what Mr. Dancer did in 2001 but I'm rooting for him to
do it again! 
Personally, I'd be surprised if a big casino didn't do more than just
determine"how much money did a player put in and how much did we pay
out" from the players club data stream.
Again, I don't know beans about what casinos really do but from a
tech perspective this stuff is EZ.
