High variance is certainly something to be aware of, but whether to call it wonderful or atrocious is purely a matter of personal situation and preference. After all, if we didn't have a fondness for variance, we'd all just stick to (ugh) working for a living.
In what sense is one "better off" to plug away at JOB? If one is motivated by avoiding a big loss, that's one thing, but other people (or the same people at other times) are motivated by the possibility big hits. Wouldn't they be better off with TDB?
With a particular bankroll, plugging away at JOB may reduce the risk of going broke (perhaps cutting a gambling trip short). Not everyone is in that situation; some gamble at a level where they're adequately bankrolled for the trip. And even for people so constrained, the excitement generated by the hope for big payoffs vs the risk of going broke is exactly what they're looking for in a trip to the casino.
I personally tend to be risk-averse, so I'd most likely plug away at JOB, with the occasional stab at TDB for instance. That's just my choice.
It's ironic that smart gamblers often speak of risk as if it's purely a bad thing. But in fact, each of us has an internal "risk thermostat," and we get uncomfortable whenever our level of risk is too high OR TOO LOW. One of the beautiful things about a casino is that it lets us jiggle our risk level (and without resorting to sky diving, bungee jumping, or mind-altering substances!). If we pay attention to our thermostat, the casino gives us the chance to calibrate risk to our personal set-point quite precisely.
