Can I catch a shuttle from the airport to the place I'm staying (Excaliber)
without making a reservation, or do I need to call ahead and make a
reservation with one of the companies I found on my search of the subject

Unless someone specifically knows the answer, I would phone the Excalibur
and ask for their bell desk to ask that question of them.

There are plenty of companies with shuttles to the strip. Pick them up right outside the airport. I think it costs about 5 buck's to the Strip and $9 buck's downtown, one-way.
From what I hear, stick to the major one's like Bell or GreyLine.
My wife and I had a horrible experience on ALS (right outside the Southwest baggage claim) about a year ago. The driver was rude, smoked on the bus and took about an hour to get us from the airport to the Gold Coast.
