You are missing the point. It's one L-O-N-G R-U-N. What happens on one, two or three or 10 sessions is irrelevant. It doesn't matter if you are playing 95% or 105% video poker.
If you don't like high variance games, then the traditional response is:
(A) don't play games with progressive jackpot(s)
(B) don't play games with the "Bonus" or "Double Bonus" or "Triple Bonus" structure games, where you lose on "two pair" or "trips" in exchange for fatter quads.
(C) Don't play multi-line games with covariance due to the dealt hand effect. Games like STP makes it even worse because you need the 10X on a dealt royal to really understand the dealt hand effect. For Double-STP, it's 20X for the dealt royal!!!
(D) Don't play games where you pay more than the standard 5-coins such that the extra 6th coin or more gets you higher payoffs for certain hands.
(E) Play games like 9-6 JOB with the RF at 500 for 1; the variance is quite small at less than 9 units. Better yet, play 1-coin 9/6 JOB with RF at 250 for 1, the variance is even lower. You might have to learn a new strategy but you will definitely enjoy the lower variance.
Lastly, Stanley Ko made a 99.9% VP game where every hand is a loser except for a certain RF as an example.

Taken to the extreme, if a machine paid 1020 to 1 on a result that occurred 1 in 1000 spins, and zero on the rest, I would never play it. It would pay out 102%, but I'd choose NSUD or 9/6 JoB over that every time.
I like a balance of entertainment value, excitement and monetary return when I gamble. This isn't my job. It's what I do for fun. And I'll take an enjoyable EV of 100.5% (including comps) over a miserable 102.5% EV any day.
